A day in the life of an apprentice – Callum Beaumont at the Tatton Arms
"My day usually starts before the sun rises - with a bottle feed and nappy change for my daughter before I’ve even thought about work. Life as a new dad has its challenges, but she’s my biggest motivator. Everything I do now is about building a better future for my family.
In the kitchen, I’m already an experienced chef, but I’m currently doing a Level 3 apprenticeship to take the next step in my career. It’s not about learning how to cook - I’ve spent years building my skills on the line. This apprenticeship is about pushing forward into a more senior, managerial role - developing skills in finance, leadership, and menu planning to help me move towards a Head Chef or Kitchen Manager position.
My day-to-day at the Tatton starts with a check-in on prep, deliveries, and making sure everything’s running smoothly ahead of service. I also take a leading role in training and guiding junior chefs - helping them build confidence, work cleanly, and stay calm under pressure. It’s rewarding to see them grow, and being able to support their development is something I take pride in.
During service, I’m focused on quality, consistency, and communication. The pressure’s always on in a busy kitchen, but staying calm and setting the tone for the rest of the team is essential. I also work closely with front-of-house to make sure service flows smoothly and that customers leave happy.
Outside of the kitchen, I carve out time for study - whether it’s deepening my knowledge of food safety and nutrition, or learning more about cost control, rota planning, and how to manage a team effectively. The support I get from HIT Training has been a huge part of helping me bridge that gap from chef to leader.
Balancing work, study, and fatherhood isn’t always easy, but it’s worth every minute. My daughter reminds me every day why I’m doing this, not just for the love of food and hospitality, but to build something bigger for the future.
This apprenticeship is helping me take that next step - and I’m proud to be on that journey."
