There’s just something about pancakes that make people happy. Beer also makes people happy. So, this year, in a break from the lemon and sugar pancake tradition, why not try something a bit different… BEER PANCAKES!
Yes, you heard us correct… beer pancakes. Adding beer to your batter will not only make them light and fluffy, but it will also take them to the next level in terms of flavour (it’s also great for when you run out of milk but still want pancakes). The short cooking time also means that most of the integrity of the beer flavours stay intact.
So, grab a bottle of your favourite Robinsons beer, dust off your apron and whip up a storm in the kitchen with our delicious American-style Beer Pancakes Recipe below!
125g sieved plain flour
4 tablespoons caster sugar
3/4 teaspoon baking powder
1/2 teaspoon salt
1 egg, beaten
250ml of Robinsons beer
30g butter, melted
Open your bottle of beer, pour a little bit into a glass and drink. Ahhh… this cooking thing is quite easy, isn’t it?
In a large bowl, stir together the flour, sugar, salt and baking powder.
Pour in the egg, melted butter and, of course, 250ml (half a bottle) of your favourite Robinsons tipple; stir with a whisk and blend. Don’t worry if it’s a bit lumpy!
Heat a frying pan over medium heat. Coat with oil and spoon about 4 tablespoons (60ml) of batter onto the hot surface for each pancake.
For Dutch courage, take a sip of your beer and when bubbles appear on top of the pancakes, flip (either with a spatula or, if you fancy showing off, try to flip them by hand).
Wait until the pancakes have browned on the other side and then serve, immediately, with your favourite toppings.
Repeat until you want to have a pancake induced snooze.
