Derbyshire Pork Recipe

DERBYSHIRE PORK & BLACK PUDDING STACK WITH GINGER TOM

INGREDIENTS:

Derbyshire Pork & Black Pudding

  • 1.2kg pork loin (8 slices)
  • black pudding (8 slices)

Jus

  • 200mls pork stock
  • 200mls Ginger Tom
  • 1 tablespoon of ginger puree
  • 1 tablespoon of muscavado sugar

METHOD:

STEP 1

Derbyshire Pork & Black Pudding

  • Combine all the ingredient for the sauce in a saucepan bring to the boil and boil rapidly for about 5 mins, then simmer till reduced by half.
  • Griddle pork and black pudding for 3 mins each side.
  • Serve with mustard mash and fresh vegetable.
