DERBYSHIRE PORK & BLACK PUDDING STACK WITH GINGER TOM

INGREDIENTS:
Derbyshire Pork & Black Pudding
- 1.2kg pork loin (8 slices)
- black pudding (8 slices)
Jus
- 200mls pork stock
- 200mls Ginger Tom
- 1 tablespoon of ginger puree
- 1 tablespoon of muscavado sugar
METHOD:
STEP 1
Derbyshire Pork & Black Pudding
- Combine all the ingredient for the sauce in a saucepan bring to the boil and boil rapidly for about 5 mins, then simmer till reduced by half.
- Griddle pork and black pudding for 3 mins each side.
- Serve with mustard mash and fresh vegetable.
